Well I have decided to go ahead and build one.  I remember a post some time ago that said there was a guide on different ways to do it here on the website, but I cant seem to find it, anyone know where it is?

Nah...puting all the drives in won't be hard.  You just have to use a micro or mini atx board with integrated everything so you have plenty of empty space.  You don't really need to worry about ventilation too much if you don't put highend stuff in it.  Just put like 2 60mm fans on each side of the breifcase, 2 for exaust and 2 for intake.  That should do it unless you plan on overclocking.
