I was wondering if someone could make a diagram for the completed stereo vu meter with for stereo (not mono). If someone would help me out here it would be greatly appreciated.

Thank you

Any mono vu meter works, just make two of the mono blocks, like here on gideontech just make the vu meter twice

http://www.gideontech.com/guides/stereovu/

make twice and use a stereo 3.5mm jack plug

its just you, since a stereo jack is pretty much 2 mono jacks. Think of it as a 2 color LED, with a 1 color LED, there is a + and a -, like a mono jack, with a 2 color LED, theres 3 Legs, 2 +s and a common -, much like a stereo jack where theres a left channel and a right channel and a common ground or whatever its called.

All you need to do is wire one VU meter to the "left" channel and one to the "right". You do not need 2 jacks.
