You may have some problems with UV LEDs because the sensor is designed to work best with infrared, which is at the other end of the visible spectrum.  Of course, if you put an IR LED in there, you can use whatever other colors you want to.

I dont mean to hi-jack your thread here, but I think it would be awesome, to have one of those high-output IR LEDs in a mouse that radio shack sells, would that work, without putting in any other LEDs, just that one?

You could try a white LED.  I'd probably work, but you might lose some tracking, especially on dark surfaces.

The LED illuminates the area so that the camera can see the change in surface pattern clearly.  As long as the LED can make the surface bright enough, your LED is fine.  As for using UV LEDs, if it doesn't work, try using a mouse pad with UV reactive patterns on it.  maybe when the UV LED lights on the surface, the patterns will glow and the camera will detect the change and register the movement.  For IR LEDs, not sure if it would work, but make sure you use an IR emitter, not a receiver.
